This September, Revo Foods introduces "THE FILET" - which marks a milestone. It is the first 3D printed food in a supermarket: A vegan salmon filet - based on fungi protein! Launching at a REWE Supermarket, THE FILET promises to reshape the culinary world and shows that the technology can be upscaled to industrial volumes.

Fungi based & 3D structured "THE FILET - Inspired by Salmon" debuts in September 2023
Technology with the potential to save the ocean
Despite the dramatic loss of coral reefs and the increasing presence of toxins and microplastics, the demand for seafood has paradoxically skyrocketed in the last decade. With 60% of fish stocks already overfished, the need for authentic alternatives has never been more urgent.
Recognizing that no existing technology could authentically replicate the traditional culinary experience offered by the fat and muscle tissue in conventional fish filets. The startup developed a completely new production machinery - from scratch, which aims to capture the essence of salmon.
The first of its kind – inspired by salmon
The new technology by Revo Foods allows the seamless integration of fat into a fibrous protein matrix - leading to a new generation of komplex vegan alternatives with the typical “flakiness” and the juicy fibers of conventional fish filets.
“With the milestone of industrial-scale 3D food printing, we are entering a creative food revolution, an era where food is being crafted exactly according to the customer needs. We are not just creating a vegan alternative; we are shaping the future of food itself."
